I want to share a new recipe that I tried last night. If you have children then you would omit the hot sauce from the recipe. I like spicy foods so that made it taste even better!

BUFFALO CHICKEN BITES
Boil Chicken and after it cools then shred it by hand.
Add hot sauce of your choice to the chicken and season to taste.
Make small balls with Chicken
Dip the Chicken ball into the flour
Dip the Chicken ball into the eggs
Dip the Chicken ball into the Corn Flakes
Place on baking sheet and bake on 300 for 20 minutes
When finished served with ranch dressing

My husband and I both loved these chicken bites. They were crunchy on the outside and yummy in the inside. We ate them with fries.

I found this recipe on Notions From Nonny. I changed a few things about it. I'm lactose intollerant so I didnt use the cream cheese that was in the original recipe. I also left out the green onions because she said her family wasn't a fan of the onions and we aren't onion people either.

Today was the first time that I cooked a meal in a slow cooker. It came out delicious. I made some pot roast. I let it cook in the slow cooker for about 7 hours. The meat was really tender. Try it and let me know how yours turns out!

I figured if i made it early it would give me time to make it again just in case I did a bad job the first time. To my surprise the dressing taste very good!

I found this recipe on Domesticated Princess Blog. These are Chicken Enchiladas. The ingredients call for sour cream mixed with cream of chicken soup. I was trying to think of another name for these. I don't think of cream of chicken soup when I think about enchiladas, but let me tell you, this dish was delicious!

Ingredients

8 oz of Cheddar
4 oz of Monterrey Cheese
2 Green Onions
1 large can of Cream of Chicken Soup
8 oz of sour cream
2 lbs of chopped chicken(cooked)
1 dozen tortillas

Directions
Boil the chicken for about 15 minutes or until fully cooked. Then drain.
Chop chicken up.
Chop green onions.
Mix cream of chicken, sour cream, chopped chicken, green onions and cheese in a large bowl

Heat tortillas ( I heated mines on an electric grill. only took a few minutes)
Add some mix to each tortilla then roll the tortilla up.
When your done filling all the tortillas then add the left over Mix on top of the tortillas
Now stick in the over on 325 degrees for about ten minutes or until cheese is melted.
Then serve!
I'm sure my picture might not look delicious but try the recipe out and you will see that it's yummy!

A Yummy Chicken Dish

I had almost all the ingredients to make these cookies, they were already in my cabinet. The only two things that were not in my cabinet were the oats and the semi sweet chocolate chips


My pictures never look as good as it takes. lol. Im still new at this whole cooking thing...but trust me these were yummy!

Chocolate Chip Oatmeal Cookies
Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup + 2 tablespoons flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups oats
  • 3/4 cup semi sweet chocolate chips

Directions 
Preheat the oven to 325 degrees
Cream butter and sugars with an electric mixer for 4 minutes. Do not skimp on the time or you will have flat cookies
Add in egg and beat for 30 more seconds.
Now put down your mixer. Do the rest by hand. SERIOUSLY!
Stir in vanilla.
In a separate bowl, mix the flour, baking soda, and salt. Pour into the wet ingredients and stir until just mixed
Add in the oats and chocolate chips
Drop by 1 - 1 1/2 tablespoonsfuls onto an ungreased baking sheet
Bake for 10-12 minutes
Cool for 5 minutes before removing from pan

My husband loves to eat burgers so for dinner last night I made him some on the George Foreman Grill. I actually found this recipe on another blog but I'm not sure which one or else I would give them credit for this incredible burger!

Here's the ingredients:
1 lb of ground beef or you can use ground turkey
1 handful Cilantro
1 cup of cubed cheese
1 cup of chopped mushrooms
1/2 teaspoon Garlic salt

Directions:

Mix all the ingredients together. Then separate into patties. I made two nice size patties with this 1lb of meat.
Of course you add anything that you want to help dress your burger up, such as tomatoes and lettuce.

What you will need:
2 boneless skinless chicken breast
shredded cheese
flower tortillas

Directions:
I boiled two boneless skinless chicken breast for about 15 minutes.
When the chicken was done boiling i rinsed it with cold water so that i could cool it down.
Then I pulled the chicken apart by hand. This is my version of "shredding" the chicken.
Next step is to put some flower tortillas on the electric grill. I just warmed them up. So they were on the grill for about a minute on each side.
I added chicken and cheese to each tortilla and then rolled it up and put a tooth pick in the center to make sure it stayed rolled.
When i was done rolling all of them, I added cheese on top and then put them in the oven on 350 degrees for ten minutes.

Take them out of the oven and cut them. Then serve with sour cream and/or guacamole.
